Cucumber Salad with Feta

It makes my heart happy when our feta flies out of the cooler at market or when it tops a wholesale order for our retail partners. We are so proud of this feta and it's versatility.

This salad actually started because I was making relish with a massive surplus of garden cucumbers and got part way into diligently finely dicing before I remembered I needed to peel the cucumbers before I canned them. I was not about to waste all that hard work so I pivoted.

By layering the sturdy veggies, feta and herbs in the mason jar, a short shake at the end after adding the liquid dressing ingredients means the whole thing comes together without making extra dirty dishes.

It would definitely be just as delicious if you used a favorite bottled vinaigrette, added or swapped veggies (looking at you zucchini surplus) or threw in a big bowl with grilled chicken.
